Allium sativum nowadays Garlic is crop widely farmed for fresh grocery by many manufacturers on a small scale for local food market* and, especially in the U.  Garlic is an adaptable species, over 1000s of years, varieties have been chosen that grow well in cold climates, often with better garlic flavors than the sorts grown in mild climates.  Garlic shoots will come out from the ground in late March or early April.  Garlic grows best on well-drained soils high in organic matter.  Garlic bears flat leaves rather than the round hollow leaves of the onion.
